Restaurant Surveillance Cameras: Edge AI, No Cloud Fee
Restaurant Surveillance Cameras: Edge AI, No Cloud Fee
Most restaurants already run a CCTV system for insurance, liability, and after-hours protection. The problem is that those cameras mostly record and store—they do not tell you when something is happening. Adding edge AI to your existing restaurant surveillance cameras turns that passive footage into real-time detection: theft at the counter, smoke in the kitchen, a fall in the dining room, or someone at the back door after close. And it does this on site, with one purchase, not a per-camera monthly subscription.
Why restaurants add AI to cameras they already own
A restaurant rarely lacks cameras—it lacks useful signals from them. Staff rotate, shifts run late, and margins are thin enough that shrinkage and false claims hit the bottom line directly. Replacing working cameras to get “smart” features means new hardware, new wiring, and another cloud bill. A better path is to keep the cameras you have and add an edge AI box (or edge-capable NVR) that reads the RTSP/H.265 stream your current system already produces.
This is the same approach we use across other sites: warehouse security camera systems watch for intrusion and unsafe acts, and farm surveillance cameras cover remote perimeter and livestock areas. A restaurant is just a smaller, busier building with its own detection priorities.
What edge AI detects in a restaurant
The value is in detections tuned to a food-and-beverage environment. With 198+ algorithms available, a restaurant deployment typically enables a core set and adds more as needed:
- Theft and shrinkage: loitering near the register, repeated reach into a tip jar, or unauthorized access to the till area during handover.
- After-hours intrusion: a person at the back door, delivery entrance, or storeroom when the restaurant is closed—see intrusion detection for how line-crossing and region rules work.
- Kitchen fire and smoke: early smoke or flame detection in cooking and extraction areas, where seconds matter. Our smoke and fire detection algorithm is built for exactly this.
- Slip and fall: a guest or staff member on the floor in the dining room or restroom—an event with direct liability exposure. Fall detection raises an alert so someone can respond, not discover it later on a recording.
- People counting and peak staffing: understand busy windows without a separate sensor network, so you can position hosts and kitchen pacing.
- Left object and loitering: an unattended bag or someone lingering at the entrance gets flagged instead of ignored by a recording that nobody watches live.
None of this requires a person staring at screens. The edge device raises an event; your team decides what to do with it.
Your video stays on site—privacy for guests and staff
Restaurant video shows real people eating, working, and paying. Sending that stream to a third-party cloud is a privacy and compliance decision, not just a cost. Running detection on site means the raw video stays on your network; only event metadata and short clips leave the premises, and only when you choose to export them. For a practical framing of responsibilities, the NIST Privacy Framework is a useful reference for mapping what you collect to why you collect it.
This local-first model is also why many operators move away from cloud-only camera brands—see our take on a security camera without a monthly fee and a Blue Iris alternative that avoids an always-on Windows PC.
Runs on your existing RTSP/H.265 cameras
If your current cameras stream RTSP or H.265/H.264, they are compatible. We do not require a specific camera brand; the edge AI reads the video feed your recorder already ingests. The RTSP standard (RFC 2326) is what makes this brand-independent approach work, so a mixed fleet of IP cameras is not a blocker.
A typical restaurant runs on 2–128 channels, with 1–256 TOPS of on-site compute depending on how many algorithms run and at what resolution. Starter configurations cover a single dining room and back area; larger sites with multiple floors, patios, and drive-throughs scale up without replacing cameras.
Pricing and deployment
Pricing is one purchase, not a subscription. The Standard line is 2 / 4 / 6 channels at USD 399 / 999 / 1,599, and configurations beyond 6 channels are quoted per project. Cable is included at 10-metre per channel, with longer runs at USD 25 per additional 10 metres. There is no per-camera monthly fee and no cloud storage charge.
Deployment is configuration-led: for in-library algorithms, a first working version is typically ready in about 7 days after we see your camera streams. If you need a detection rule we do not yet have, we review your camera streams first and confirm scope before committing to a date—custom algorithms are delivered when they perform to the agreed scope, not on a fixed calendar guess.
After delivery, the site-wide policy is no refunds; Standard-tier hardware is exchangeable within 30 days, and custom configurations are commissioned until they perform to the agreed scope.

Frequently Asked Questions
Can I run AI on the cameras I already have in the restaurant?
In most cases, yes. If your cameras output RTSP or H.265/H.264, an edge AI device reads that stream without replacing the cameras. We confirm compatibility after a quick look at your current recorder and channel list, then propose a channel count.
Does restaurant video leave my premises or go to the cloud?
Detection runs on site. Raw video stays on your network; only event metadata and clips you choose to export leave the building. This keeps guest and staff footage local and avoids recurring cloud storage fees.
What can edge AI actually detect in a restaurant?
Core detections include theft and loitering at the register, after-hours intrusion at doors and storerooms, kitchen smoke and flame, slip and fall in the dining room, people counting for peak staffing, and left-object alerts. The algorithm set is expandable across 198+ options.
How much does it cost and how long does deployment take?
One purchase: Standard 2 / 4 / 6 channels at USD 399 / 999 / 1,599; beyond 6 channels is quoted per project. Cable is 10 m per channel, USD 25 per extra 10 m. A configuration-led pilot with in-library algorithms is usually ready for a live pilot in about 7 days once we see your streams.
